YOUR MENU: Streusel Apple Pie INGREDIENTS YOU'LL NEED: Pie Dough: 100 grams (7 tablespoons) very cold butter 150 grams (1 cup + 1 teaspoon) all purpose flour, plus extra for dusting 1 gram (pinch) salt 5 grams (1 teaspoon) granulated sugar 50 grams (¼ cup) cold water 1-2 pounds of dry beans, rice or baking weights Apple Filling: 4-5 apples or 6 cups cut, choose a sturdy variety like granny, pink lady or honeycrisp 140 grams (⅔ cup) granulated sugar 16 grams (2 teaspoon) all purpose flour 1 gram (½ teaspoon) ground nutmeg 2 grams (¾ teaspoon) ground cinnamon or apple pie spice blend ½ gram (½ teaspoon) lemon juice 4 grams (2 teaspoon) apple cider/ apple juice 42 grams (3 teaspoon) unsalted butter pinch salt Streusel Topping 113 grams (1 stick) unsalted butter 70 grams (¼ cup) granulated sugar 55 grams (3 ½ teaspoons) brown sugar ½ gram (¼ teaspoon) ground cinnamon 210 grams (1 ½ cups) all purpose flour pinch salt EQUIPMENT YOU'LL NEED: rubber spatula pie pan 9”x 2” or smaller medium to large sized pot with a lid baking weights (dry beans, rice or weights) knife cutting board peeler rolling pin whisk stand mixer or pastry cutter parchment paper aluminum foil sheet tray with liner extra bowls and spoons measuring cups and teaspoons pastry brush fork apron, optional but recommended
