YOUR CLASS MENU: Flounder in a Chinese Black Bean Sauce Sautéed Bon Choy INGREDIENTS YOU'LL NEED: 4 flounder fillets 3 tablespoons fermented black beans, rinsed and chopped 2 cloves garlic, minced 1 tablespoon ginger, minced 2 tablespoons soy sauce 1 tablespoon rice vinegar 1 tablespoon sugar 2 tablespoons vegetable oil 1 tablespoon cornstarch 1/4 cup water or chicken broth Sliced green onions for garnish 4 baby bok choy heads, halved or quartered 2 cloves garlic, minced 1 tablespoon vegetable oil 1 tablespoon soy sauce 1 teaspoon sesame oil 1 teaspoon rice vinegar Red pepper flakes (optional for heat) Salt and pepper to taste EQUIPMENT YOU'LL NEED: non-stick skillet mixing bowl spoon for mixing large pan or wok for stir-frying spatula or tongs for flipping and handling fish serving plates and utensils paper towels for patting dry fish cutting board sharp chef’s knife measuring cups and spoons
