YOUR CLASS MENU: Ricotta Gnocchi with Brown Butter Sage Sauce INGREDIENTS YOU'LL NEED: For the Ricotta Gnocchi: 1 cup whole milk ricotta cheese 1 cup grated Parmesan cheese 1 large egg, lightly beaten 1/2 teaspoon salt 1/4 teaspoon black pepper 1/4 teaspoon freshly grated nutmeg 1 1/4 cups all-purpose flour, plus extra for dusting For the Brown Butter Sage Sauce: 1/2 cup (1 stick) unsalted butter 8-10 fresh sage leaves Salt and black pepper to taste Grated Parmesan cheese (for garnish) EQUIPMENT YOU'LL NEED: large mixing bowl clean work surface knife or bench scraper fork or gnocchi board baking sheet large skillet spatula or spoon slotted spoon grater pot for boiling water measuring cups and spoons
