Dope Celery Soup

Finally letting mirepoix be a star. This savory celery soup is pretty dope. Enjoy!




From the Pantry

kosher salt

3 cups low-sodium chicken broth

1 large sweet potato, chopped

1 medium onion, chopped

flaky sea salt and olive oil for serving


From the Fridge

1/2 cup nonfat greek yogurt

1/2 cup or 1 stick unsalted butter

1 head celery, stalks chopped, leaves reserved

2 carrots, grated


Recipe

About 4 servings

Combine celery, potato, carrot, onion, and butter in a medium saucepan over medium heat; season with kosher salt. Cook, stirring, until onion is tender, 8-10 minutes. Add broth, simmer until potatoes are tender, 8-10 minutes. Stir in greek yogurt. Serve soup topped with celery leaves, sea salt, dollop of greek yogurt, and a drizzle of olive oil.
