Summer tomatoes are a magical experience, far removed from those hard, pale rocks found in the supermarket every month outside of summer. Summer tomatoes are sweet, juicy, bold in color, and rarely disappoint. Perhaps one day in a very adult future, I will grown my own tomatoes in my backyard, but for now, I am shopping local, small business farm stands. Perhaps this week, swing by the market and grab the most colorful, heavy, sweetly scented tomatoes you ever did see and whip up one of these dishes.
